Capacity Building Program for Local Business Service Providers to Deliver Advisory and Training Services to Small and Medium Enterprises in Food Protection

Training Outline

a. Formal Classroom Presentations

The following subjects will be presented using a Train-the-Trainer approach:

- Basic Instructional Training (providing the skills needed to provide the required technical training)
- Preparation of Training Materials (Participants will learn how to prepare training materials. Later in the training the participants will prepare actual training materials that will be used by them when they are actually training clients employees)
- Ethics, liabilities and responsibilities
- GAP – Good Agriculture Practices
- GMP – Good Manufacturing Practices
- SSOP’s – Sanitation Standard Operating Plans
- HACCP – Hazard Analysis Critical Control Point pans and  programs
- Recalls
- Traceability
- Auditing – Internal and Third Party
- Food Regulation
- Export Certification
- Food Testing
- Entrepreneurship - How to successfully operate a BSP providing Food Protection Services

b. Practicum 

- Participants will provide training courses initially with assistance of instructors and then on their own.
- Participants will develop actual food protection plans for a variety of products
- Participants will receive certification upon successful completion of the training

c. One-On-One Assistance for Business Service Providers

- Instructors will work with individual BSPs to develop a sustainable and successful Food Protection Practice
